A Taste of Persian Mornings

Wholesome Halim and sweet Shirmaal bread for the perfect breakfast or brunch

Halim is one of those dishes , in Iran, it’s the kind of breakfast you’d wake up early for on a chilly morning, shared with friends and neighbors, or the dish your mother would lovingly prepare overnight so it’s ready just in time for breakfast. Especially in fall and winter, nothing warms the heart quite like a bowl of Halim, with its comforting blend of wheat, lamb, and a hint of cinnamon on top.

In this workshop, you’ll not only learn how to prepare these dishes step by step, but also discover the cultural stories behind them why Halim is a cherished early-morning food across Iran, and how Shirmaal brings sweetness and warmth to family gatherings.

And then there’s Shirmaal Bread , soft, golden, and lightly sweet. It’s the kind of bread that feels like home, reminding you of childhood moments, teatime with family, or simple joys at the table. Its gentle sweetness isn’t overwhelming; instead, it makes every bite comforting and familiar.

In this workshop, we’ll bring these two classics to life. You’ll not only learn the techniques to make them step by step, but you’ll also carry with you the cultural stories and warmth behind each bite.

A trip back to Iran. This Halim workshop was absolutely worth it! Although the process takes time, every step was well explained, and the final result was incredible. The taste instantly reminded me of the delicious Halim I used to enjoy in Iran, which made the experience even more special. I'm so happy I learned how to make it from scratch, and I can't wait to make it again at home. Highly recommended for anyone who loves authentic flavors!

Making a memorable brunch! I have always heard from people living abroad that food tastes better in Iran when prepared in its authentic recipes. But with all due respect, I need to tell them that "Sorry dear friends, the problem is not from ingredients here or any other excuse! The problem is that you are not following a great recipe!" I can swear Leili's recipes are better than what I had in Iran! I am making better taste and quality here in the USA compared to Iran. Trust me, my friend, get Leili's workshops and you will thank her for the rest of your life. Wherever you live, you can have great flavors.

Haleem and Shirmal Bread Haleem: I usually prepare Haleem for my American friends every December, and each year they eagerly anticipate it. When Leili announced her Haleem workshop, it was clear her recipe would be exceptional, and it absolutely was! Leili guided us in creating a Haleem with a unique, incredible texture that delivered an amazing taste to every part of our tongues. Leili's recipes and training always open my eyes to a wonderful land of culinary abundance. You just need to close your eyes, savor a spoonful of this Haleem, and immerse yourself in that world. I don't know what kind of magic it is, but it definitely creates a stronger connection with life. I must also highlight that I recently made this Haleem for my friends, and they all declared that if this was Haleem, all my previous attempts were merely jokes! Shirmal Bread: When I was seven, there was a confectionery that made exceptionally tasty Shirmal. Whenever my parents asked me to choose a prize, instead of toys or other attractive items, I always requested that specific Shirmal. That confectionery closed when I was eleven, and for over fifteen years, I couldn't find the same taste in any other Shirmal. Leili's Shirmal recipe was the exact taste I had been searching for all this time. Unbelievable! I was instantly transported back to my childhood with Leili's Shirmal, and who would believe I could bake it myself, thanks to the training of the wonderful Chef Leili! Do not miss this amazing workshop!
