The Art of Medovik: Russian Honey Cake Masterclass

Recorded Workshop

A Timeless Russian Honey Layer Cake with Delicate Caramel Notes and Silky Cream Filling

Medovik, also known as Russian Honey Cake, is one of the most beloved and iconic desserts of Eastern Europe. Famous for its multiple thin honey-infused cake layers and luscious cream filling, this elegant cake develops an incredibly soft texture as it rests, allowing the layers and cream to meld into a perfectly balanced dessert.

The origins of Medovik date back to the early 19th century in Imperial Russia. According to culinary legend, the cake was first created by a young pastry chef serving Empress Elizabeth Alexeievna, the wife of Tsar Alexander I. Ironically, the Empress was known for disliking honey, yet she fell in love with the delicate cake without realizing honey was its star ingredient. The dessert quickly gained popularity among Russian nobility and eventually became a treasured classic throughout the region.

What makes Medovik truly special is the transformation of simple ingredients into something extraordinary. Honey, butter, eggs, flour, and cream come together to create numerous thin layers that bake into lightly caramelized sheets. When assembled with a tangy cream filling, the cake gradually softens over several hours, resulting in a melt-in-your-mouth texture that has become its signature characteristic.

Traditional Medovik recipes vary from family to family and region to region. Some versions feature a sour cream filling, while others use sweetened condensed milk, whipped cream, or a combination of both. The balance between the floral sweetness of honey and the slight tanginess of the cream creates a sophisticated flavor profile that appeals to both casual dessert lovers and pastry enthusiasts.

Today, Medovik is celebrated far beyond Russia and Eastern Europe. Modern pastry chefs around the world have embraced the cake, creating innovative interpretations while preserving its essential character. Despite contemporary variations, the classic version remains a symbol of hospitality, celebration, and the enduring appeal of handcrafted layered cakes.

In this masterclass, you will learn the traditional techniques behind creating perfectly thin honey layers, preparing a smooth and flavorful cream filling, assembling the cake with precision, and achieving the signature soft texture that makes Medovik one of the world's most memorable desserts. Whether you're a home baker or a professional pastry chef, mastering this cake will add an elegant and impressive centerpiece to your repertoire.

Absolutely delicious Medovik! The layers were soft and delicate, with a wonderful honey flavor, and the creamy filling was perfectly balanced—not too sweet. The texture was light, moist, and practically melted in my mouth. Every bite was flavorful and satisfying. Beautifully made and definitely one of my favorite cakes. This class made me appreciate how special Medovik really is. Building all those delicate honey layers takes some patience, but watching them transform into such a soft, beautifully balanced cake was incredibly satisfying. The flavor gets even better after resting, and the final result was absolutely worth the effort. A memorable class and a cake I’ll be making again!

Chef's kiss Medovik Cake! In my opinion, Medovik is one of the true masterpieces of pastry. It has the perfect balance of sweetness, cream, and delicate honey layers. The first time I tasted Medovik was about eight years ago from a home bakery. Although I rarely eat cake, especially cream cakes, I immediately fell in love with it. When Leili announced this workshop, I was honestly so excited! I had always believed Medovik was one of the most difficult cakes to master, but once again, Chef Leili proved that nothing is impossible with the right teacher. As always, she taught us how to make this beautiful cake perfectly, step by step, with the confidence of an experienced professional. The workshop was outstanding, friendly, calm, incredibly detailed, and taught in such a patient and encouraging atmosphere. Every single step was clearly demonstrated and thoroughly explained. Beyond the traditional Medovik recipe, Leili also taught us how to create several delicious variations, including Nutella, Lotus Biscoff, pistachio, espresso, and other flavors, along with different frosting options. One of my favorite additions to her workshops is that she now provides visual step-by-step instructions after each class, making the learning experience even more valuable. You wouldn't believe how beautifully everyone's cakes turned out. Every single Medovik looked absolutely bakery quality—truly a chef's kiss! Honestly, the price of this workshop does not reflect the value of what you learn. The amount of knowledge, techniques, tips, and confidence you gain is worth far more than the registration fee. If you've been thinking about taking this course, don't wait. It will truly take your baking skills to the next level!
