Meet the Breads
1. Oat and Whole-Grain Sandwich Bread
This is the loaf you’ll want on hand for breakfast toast, everyday sandwiches, and packed lunches. Oats and whole grains bring a hearty flavor, while the bread is designed to slice neatly and feel soft and pleasant to eat.
We’ll look at how oats and whole grains absorb moisture and affect the dough. You’ll learn what to watch for during mixing and proofing so you can bake a loaf with good structure and a tender crumb.
2. Whole-Wheat Pocket Pita
Warm pita is especially useful when it opens into a pocket you can fill with your favorite ingredients. This whole-wheat version works beautifully with grilled proteins, vegetables, salads, and spreads.
You’ll learn how to divide, rest, and roll the dough, and why baking heat matters so much for a good pocket. We’ll focus on pita that puffs well and stays soft enough to fill and fold.

3. Protein-Packed Flatbread
Soft and flexible, this flatbread is made for wraps, quick lunches, or serving alongside a meal. Its savory flavor makes it easy to pair with fillings, dips, and salads.
We’ll focus on creating a flatbread that holds together without becoming dry or stiff. You’ll learn how to handle, shape, and cook it evenly for a satisfying texture.
4. Seeded Protein Burger Buns
A great burger bun should be soft enough for an easy bite and sturdy enough to hold a generous filling. These seeded buns are designed for burgers, grilled chicken sandwiches, and other everyday meals.
We’ll cover portioning and shaping even buns, judging their rise, and baking them for a tender interior. Seeds add flavor and texture while giving each bun an inviting finish.

5. Whole-Grain Mini Baguettes
These mini baguettes bring a satisfying crust and chewy bite to the collection. Their smaller size makes them useful for individual sandwiches, serving with dinner, or freezing for later.
You’ll practice shaping, scoring, and baking for good structure and crust. We’ll also explore how whole grains and sourdough techniques can contribute flavor to this style of bread.

Bring Better Bread Into Your Everyday
By the end of this workshop, you’ll have more than five new recipes. You’ll understand what makes each bread work: how to build a soft loaf that slices well, encourage a pita to form its pocket, keep a flatbread flexible, shape tender burger buns, and bake mini baguettes with a satisfying crust.
These breads are designed for the meals you make throughout the week. Toast a slice with breakfast, fill a warm pita for lunch, turn flatbread into a quick wrap, make burger night your own, or serve fresh baguettes with dinner. You’ll also learn how to store and freeze what you bake, so homemade bread can be ready when you need it.
Most of all, this workshop is an invitation to feel more confident with bread dough. Once you can recognize its texture, follow its rise, and shape it for the result you want, you can bring fresh bread into your kitchen in ways that fit your own routine—and enjoy every step of making it.
